What quick and easy recipes do you turn to when time is an issue?
One we use in a pinch is "turkey sausage with pork beans". The kids love it and it takes, no kidding, 5 minutes to prepare! I use turkey sausage and slice it into chunks'. Then I heat two cans of pork and beans, add the turkey sausage to the beans and serve with a slice of bread and butter. It always leaves them feeling satisfied.

We have Mexican night at our house at least once per week. All that I actually cook is a pound of ground beef, turkey, or stew some chicken breasts in in the crock pot. Some nights I even skip the cooking altogether and just get a rotisserie chicken to shred. We load chips, taco shells, or tortillas with lots of healthy "goody"...lettuce, tomato, cheese, black olives, black beans. The more toppings the better. The kids really enjoy creating their own concoction.
All of these same toppings can double on baked potato/salad bar night! Another quick, easy, and healthful dinner.
