Patriot Recipe

Curried Chicken Salad

3 cups cooked chicken
1 C chopped celery
½ cup diced red unpeeled apple
2 to 3 T raisins
¼ C coarsely chopped peanuts (or other nut)
1 t curry powder
½ t salt
1 t cider vinegar
½ t fresh ground black pepper
1/8 t ground cayenne pepper
1 C mayonnaise (or to taste)

Mix all ingredients and refrigerate until ready to serve.

Enjoy!

We like this on croissants and in pita pockets.
